Today I wanted to share a recipe for Elderberry Syrup that I got from my best friend back in West Virginia and she got from a lady named Ginny Lane. Thanks to you both for sharing.

This recipe can be made with fresh or dried elderberries so if you don’t have access to fresh berries you can still make you own syrup. I like to order mine from Mountain Rose Herbs, I’ll leave a link. This recipe is for small batches but can be scaled up to any quantity that you may want. Based on the ratio of honey to elderberries it can last from 6 months to a year in the refrigerator.

To make the Elderberry Syrup

Per quart of water-1 cup of dried elderberries or 2 cups of fresh

Optional:

2 Tbsp dried ginger or 4 Tbsp fresh

1 tsp cinnamon

1/2 cup elderflowers if desired.

Simmer- until reduced by half. Remove from heat. This is the time to add 1/2 cup of elderflowers if desired. Let cool to warm, about 100 degrees or less.

Add honey: 1:1 ratio. Stir well, label, and refrigerate. Local honey is the best to help with local immunity.

To make a shelf stable syrup, use 2:1 ration of honey to decoction. A 1:1 syrup will last six months to a year in the refrigerator

Dosage: Adults 1-2 tablespoons 1-2 times a day during the cold and flu season or during exposure. Children take 1-2 teaspoons 1-2 times a day. If you feel symptoms coming on you can take it up to 5 times a day.
