Winter Recipe Share time! Warming Winter Squash Soup

Do you love a good soup? I LOVE a good soup especially in the winter time. I also love me a beautiful winter squash, they are so beautiful. So this recipe is a perfect marriage of the two. This recipe is another one from one of my favorite books Nutritional Healing with Chinese Medicine by Ellen Goldsmith and Maya Klein. This book is wonderful and if you don’t have it you should get it.

Now the recipe!

  • 1/4 cup buttercup squash seeds ( you can also use shelled raw pumpkin seeds if you prefer but reduce roasting time to 10 min)

  • 1 leek

  • 2 tbsp avocado oil

  • 4 cups cubed, peeled and seeded buttercup squash

  • 2 cups coarsely chopped napa cabbage (you can use regular green cabbage if you can’t find napa)

  • 2 tsp grated ginger root

  • 2 tsp salt

Preheat oven to 350 F or 180 C

Need a pan to toast your seeds

  1. Put your seeds on you baking pan. Roast in the preheated oven for 15 min or 10 if using pumpkin seeds). Once cool use pliers or rolling pin to shell the seeds.

  2. Trip off the roots and all but 3 inches of the dark green of the leek and discard. Cut the leek in half lengthwise, then cut crosswise into 1/2 inch wide pieces. Rinse really well to remove any grit.

  3. In a medium sauce pain, heat your oil over medium high heat. Add the leak and saute for about 5 min or until translucent and edges are sightly brown.

  4. Add 4 cups water, squash, cabbage, ginger and salt and bring to a simmer over medium high heat. Reduce heat and cover. Simmer for about 25 minutes until squash is tender.

  5. Ladle into serving bowls add the leeks and seeds. Server immediately.

One of the things I love about this book is that they tell you something about the properties of the dish in relationship to your health. In this case the winter squash is sweet, warming and is good for nourishing and supporting digestion. The leek and cabbage are great for promoting good digestion and the ginger is good for the stomach. They recommend this soup for people with a cold, chills or coughs with phlegm and can also help fight indigestion.
